White Sturgeon

Acipenser transmontanus, acipenser is an old world name meaning sturgeon and transmontanus meaning beyond the mountains.

White sturgeon are the largest freshwater fish in North America and can weigh over 1,500 pounds, be 20 feet in length, and live for over 100 years. Fishing is strictly controlled by fisheries biologists and only non-reproducing fish between 42 and 72 inches maybe kept for sale.

White sturgeon are sold in "Bullet" form, dressed, head, fins and " buttons off. The average size of the "Bullet" is 15 lb.s.

The firm white meat is mild in flavor,delicious and lends it's self to a wide variety of preparations. Grilling a sturgeon steak is a favorite way to serve sturgeon.

Quinault Pride Seafood White Sturgeon is wild caught by native fishers in the pristine waters of the Quinault Nation.
