Dungeness crab is a West Coast delicacy and a staple for crab connoisseurs worldwide. The largest and meatiest specimens come from the deep, cold waters off Washington’s Olympic Peninsula, where Quinault fishermen harvest and deliver them live to the dock. Only male crabs with a minimum shell width of 6¼ inches are harvested, helping maintain a healthy population.
