Salted salmon roe, otherwise known as "Ikura," is made from fresh salmon roe. The individual eggs are separated from the skein, then cured in a salt brine, dried, and packaged into one-kilo bentos. Each salmon species contributes unique flavor characteristics. Chum salmon roe is especially prized, but pink, coho, and king salmon are also used. These brilliant orange eggs add bold color and flavor to any plate.
